Background: “Vins de France” can be produced throughout the whole of France using grapes harvested exclusively within its borders. This quite new appellation (2009) allows for a greater liberty in winemaking compared to the appellation system. It is a great opportunity for our winemaker to express his skills with a wine with a steady style and unique personality.

Winemaking process: Fermentation takes place at low temperatures in order to preserve all of the grapes’ aromas and flavours. The wine is then aged for a few months on finelees.

Tasting notes: Golden, pale straw yellow in colour. Very fine and mineral with notes of fresh fruit. Well balanced, with a strong acidity that is nevertheless sustained by good maturity. The aromas are typical (blackcurrant blossom, litchi). This wine has the characteristics of a typical Sauvignon Blanc with a lot of finesse and purity.

Food pairing: As an aperitif, with seafood, a tuna carpaccio, smoked salmon, sushi or Japanese fish dishes, but also goat cheeses or asparagus in sauce.
