Pierre Lamotte Cabernet Sauvignon
Country/Region of Origin: France

Region: France, Bourgogne

Grape variety: Cabernet Sauvignon

Background: “Vins de France” can be produced throughout the whole of France using grapes harvested exclusively within its borders. This quite new appellation (2009) allows for a greater liberty in winemaking compared to the appellation system. It is a great opportunity for our winemaker to express his skills with a wine with a steady style and unique personality.

Winemaking process: The grapes are machine harvested and the bunches are de-stemmed before undergoing a period of cold maceration to increase extract of colour. The alcoholic fermentation lasts 8-10 days at controlled temperatures, with a daily pumping over of the juice. The malolactic fermentation follows and the wine is kept in tanks for 4-6 months before bottling.

Tasting notes: Bright red with purple highlights. Vegetal flavours with nice fruity notes (black berries). Sunny, rich and well-balanced, this wine presents intense black fruit aromas. Silky tannins with a nice persistent finish.

Food pairing: Ideal with grilled or marinated poultry dishes, red meats with Mediterranean vegetables, a leg of lamb with rosemary.
