Background: Moillard's vineyards are currently undergoing the process of becoming organic certified which should be completed over the next two years. The viticultural practice has always been very natural and non-invasive, allowing the vines to grow deep roots and really show all that the terrior has to offer.

As an Eleveur-Négociant, Moillard also produce wines from thoroughly selected grapes purchased from over 100 growers in Burgundy, Beaujolais and the Rhône Valley. Moillard uses newer technology to produce their wines, such as cool fermentation, in combination with the traditional Burgundian maturation in new and old oak. The technology allows good extraction of fruit and bouquet while the tradition produces more depth and complexity. Their Cotes du Rhone is a delicious blend of Syrah, Grenache and Mourvedre and it got its name from the actual aromas of violets.

Tasting notes: This is a shockingly elegant wine. It is primarily Syrah and Grenache with small amounts of Mouvedre mixed in. As opposed to most Cotes du Rhone it is soft and like the name implies full of delicate violets flavours. The tannins are almost imperceptible. The nose and body are soft and jammy with the smallest hint of spice in the finish. This is the perfect wine for the spring. Delicate and soft, smooth and sublime.
