Winemaking Process: Hand-picked in small crates, the grapes are carefully sorted so that only the best are used. Winemaking is traditional, with alcoholic fermentation followed by malolactic fermentation, and the wine is then aged for 12 months in neutral French oak barrels (to soften it, rather than add wood and vanilla flavours through new oak).
Tasting Notes: Golden yellow colour with green highlights. The wine is a pure expression of the Cote Chalonnaise: minerality with chalky notes, freshness with a great acidity holding together the finish, elegance with orange blossom and hawthorn notes.
Food Pairing: Very good for pairing with fish based dishes or vegetarian dishes.
Tasting Notes: Nice gold yellow colour with emerald reflections. The bouquet reveals very nice aromas of citrus and white flowers, with mineral notes and a very fine wood. Round attack, this wine is well balanced and offers a palette of flavours (citrus, mineral, toasted breads, butter). A nice length and a lot of freshness.
Food Pairing: This wine will be perfect paired with charcuterie platters (ham or pates) or seafood (scallop-shells or salmon). It can also be drunk with hot first courses, such as quiches and pies or with dry cheeses (goats cheese for instance).
