Region: France, Bourgogne
Grape Variety: Cabernet Sauvignon
Background:
Winemaking Process: The grapes are machine harvested and the bunches are de-stemmed before undergoing a period of cold maceration to increase extract of colour. The alcoholic fermentation lasts 8-10 days at controlled temperatures, with a daily pumping over of the juice. The malolactic fermentation follows and the wine is kept in tanks for 4-6 months before bottling.
Tasting Notes: Bright red with purple highlights. Vegetal flavours with nice fruity notes (black berries). Sunny, rich and well-balanced, this wine presents intense black fruit aromas. Silky tannins with a nice persistent finish.
Food pairing: Ideal with grilled or marinated poultry dishes, red meats with Mediterranean vegetables, a leg of lamb with rosemary.
