Background: South of the Côte de Beaune in Burgundy, Chassagne-Montrachet shares with Puligny the undisputed prince of all the dry white wines of creation: the divine Montrachet (pronounced Mon-rachet). This wide and beautiful hillside brings to excellence the two Burgundy grape varieties.

Tasting Notes: Beautiful pale gold, limpid and shiny with emerald reflections. The nose is fine, elegant, refined, floral (white flowers) and fruity (pear) wioth some notes of fresh almonds and hazelnuts. The palate is pure, with acidity well integrated and a nice roundness. The flavours are both floral and fruity and delicately woody. This wine will know how to assert itself with age. Very promising!

Food Pairing: This wine is perfect served with poached turbot and beurre blanc, Bresse chicken with a cream sauce, eel, smoked salmon, trout with almonds shellfish and veal sweetbreads. It is also an ideal match for Japanese mochi.
