Grape: 100% Cabernet Franc
Winemaking Process: De-stalked. Fermentation lasts 15 days on skins with pumping over twice a day. Pressing and final fermentation of clear juice. Transferred to vats for malolactic fermentation. Maturing in stainless steel tanks with regular racking.
Tasting Notes: Beautiful garnet red colour with purple reflections. Beautiful aromatic expression on notes of red fruits evoking morello cherries and blackberries, some fine vanilla aromas. Supple attack, evolution on a beautiful structure with already velvety tannins, fresh and fruity on the nuances of fruit of the olfaction.
Food Pairing: This Cabernet Franc pairs well with lamb dishes, poultry, any vegetarian dish as well as goats milk and goats cheese.
