Yellowtail Cabernet Sauvignon
Country/Region of Origin: Australia

Region: Yenda, Australia

Grape Variety: 100% Cabernet Sauvignon

Winemaking Process: The process of winemaking is pretty long where the grapes are crushed and the stem is removed. They are then kept for fermentation on skins in contact with oak. The temperature controls the fermentation which allows maximum varietal flavour, colour and tannin extraction.

Tasting Notes: Classic and velvety, with notes of juicy blackcurrants, sweet mocha and spice. This Cabernet Sauvignon is fragrant and rich. A fragrant aroma of red fruits, blackcurrants, blackberries and sweet mocha fills the nose.

Food Pairing: This Yellowtail wine pairs well with vegetable stew with pesto, potato pan with salmon or veal steak with beans and tomatoes.
