The production line consists of a low-oxygen impact system that maintains the maximum oil contained in the just-picked olives. The team adjusts all the parameters according to the olive varieties and their health, temperature, ripening, water concentration and the aromas and flavours desired in the end result. Once extracted, the oil is filtered immediately through cellulose panels to remove 99% of the water. It is stored in stainless steel vats, away from the light, at temperatures ranging between 14 and 20°C to extend the shelf life. Bottling takes place in an inert atmosphere using bottles that reduce UV penetration to 97%.
Tasting notes: The olive oil is green in colour. The aromas are fruity olives with nuances of almonds, freshly cut grass and artichokes. The flavours are robust, medium intense, bittern and piquant.
Food pairing: Thinly sliced Chianina beef with porcini mushrooms, baby spinach, grilled radicchio, lentil soup, pasta with artichokes, baked oily fish, grilled game and red meat, mature cheeses.

Tasting notes: The colour is intense ruby red. The aromas are intense, with distinct notes of ripe red fruit, like sour cherry and cherry that blend with floral hints, like dried violet. The flavour is refreshing, with mineral nuances. Mature, lasting tannins. Red fruits, like sour cherry and cherry, dominate. Boasts excellent drinkability and a long, pleasant finish.
